A simple technique that was lost to time is that of "Governo" according to the Tuscan use. With enthusiasm, we have decided to make use of it again and to put ourselves to the test with a new wine. From this technique comes our new wine Poggio alla Pietra, 80% sangiovese, with equal parts cabernet sauvignon and Alicante bouschet. The technique of "Governo all'uso toscano" entails slow fermenting the wine as soon as it is produced. The addition of a small quantity of grape-must (15% of solely sangiovese grapes) selected and dried on trellises for about 2 months, setting off a second fermentation, confers a more smooth and rounded flavor
