VARIETY RESERVA BLEND MERLOT (60%) - CABERNET SAUVIGNON (40%)

This wine blends two varieties from the southern limit of the Maule Valley, aiming to harmonize the floral aromas and velvety softness of the Merlot, with the tasteful structure and soft tannins of the Cabernet Sauvignon.
Vineyard yield: 10 ton/ha.
Harvest date: Last week of March.
TECHNICAL NOTES
Grapes of each variety were hand picked and transported in small trays to the winery. Fermentation took place in separate for 9 days, with temperatures of 27ºC for the Merlot and 30ºC for the Cabernet Sauvignon. After fermentation the blend was performed in the percentages shown above and the wine was kept in stainless steel tanks. The blend has not been treated, and only softly filtered to preserve aromas and structure.
TASTING NOTES
The vinification process has been targeted to obtain a young wine with typical characteristics for early consumption, keeping plum and cherry aromas, complemented by floral and spicy notes. Although it can be enjoyed now, or continue to evolving favorably for several years.
SERVE Serve at 17 - 18°C. Recommended for pasta, stews and lightly spiced recipes
