WINE: TAM is a proprietary blend of Cabernet Sauvignon 60% Cabernet Franc 40%, aged 18-24 months in French oak barriques, min.12 months in bottles
COLOR: deep ruby red
NOSE: complex layers of black berries, plums, hints of fresh Chinese red dates, nuances of spices, licorice, toasted coffee beans
Palate: nicely balanced structure and concentration of black fruit flavors, well integrated firm tannins, elegant with persistent good length
FOOD PAIRING: grilled and roasted red meats, games, stews even with a touch of chocolate, roasted duck/duck confit, seasoned cheeses, try it even with strong personality fish like salmon, swordfish cooked in hearty sauces.
PRODUCER NOTES: This is our top wine, made in smaller quantity to reflect the best quality grapes we grow especially for this wine, including the grapes from a unique clone of Cabernet Sauvignon planted in a only 0.25 ha parcel. The name Tâm is Vietnamese for passion, indeed the passion that moves us the producers in our search of that elusive balance between elegance and power for our wines. The label design is taken from the Chinese calligraphy which also means heart, passion. Its harmony and finesse make the wine delicious, tempting us to drink it now, -much too soon, some would say. But life is made of pleasures, and it’s up to each of us to define what they are and how to enjoy them.
