This is a series of wines from the Cholqui soils of Maipo Valley, Chile. Merlot: A wine of deep red color with some violet hues. Black pepper and clove aromas with god spiciness. Some coffee and mocca notes in perfect harmony with berries and currants, giving the feel of an elegant well balanced wine. Nicely balanced in the mouth, with dark plum flavors and abundant spice. Very elegant, soft and silky. Displays good amount of vanilla, coffee and wood grain, making it complex but fruit-driven. Ideal to accompany red meats, game pieces and strong cheeses. After years working with this variety and its full expression in the Cholqui soils, we have been selecting the best lots for the production of this wine. With poor soils and yields of 8 tons per hectare, the vineyard management is almost not needed. Cabernet Sauvignon: Grapes from the oldest quarter of our vineyards with balanced vines that do not produce more than 7,000 kilos per hectare. Weeks before the harvest the clusters are exposed to the light in order to allow them to mature to perfection. 100% of this wine was allowed to age for 10 months in French oak casks, followed by a further 12 months in the bottle. Intense red color. A cold weather cabernet, both fresh and elegant, with an aroma of red fruits such as raspberry and strawberry. The wood notes from the French cask are well integrated and provide a delicate contribution in the mouth. A unique wine, mellow but also complex in flavors and aromas, notable for its freshness. A delicate wine but at the same time long, with a lasting effect on the palate, easy to drink. At its best between 17 and 19°C. Ideal for accompanying red meat, casserole dishes, semi-mature cheese and spicy dishes. It can be kept for 1 to 8 years. Carménère: We work with a group of selected blocks and vines that show their concentration of flavors and aromatic profile to perfection. The yield is very low, only 4 tons per hectare to achieve all the strength and fruit concentration needed for this wine. A good example of serious Carmenere from Chile. The grapes are picked by hand in April, for good concentration, nice flavors and aromas. Racked in barrels and aged for better structure and softer character. Bottled unfiltered to keep all the body and expression of it. A wine of intense violet color, it offers aromas of blackberries and plums with graphite and coal on a masculine nose. Solid and ripe fruit with black cherry and chocolate. A good example of the emblematic grape to Chile with soft tannins and rich complexity. An easy drinking wine with lively flavors and good feel. It is ideal to accompany red meats, casseroles, pasta and strong cheeses.
