Old Kempton Distillery

The Pinot 46% presents the Old Kempton house style through the prism of Tasmanian Pinot Noir casks. The pinot casks produce a bright vibrant style of single malt whisky that captures the blackcurrant, mulberry, and spiced cherry flavours of the wine and balances them with a beautiful depth of malt and oak. The Pinot Noir casks are matured for a relatively short period of time (4.5 years) to maintain the vibrancy and avoid the whisky becoming dominated by tannins that make it unpleasantly dry and astringent.

Tawny is the classic cask style that Tasmanian whisky built its name on over the last thirty years. These casks are predominately sourced from South Australia and the sweet fortified wines bring plum pudding and spice notes to the single malt whisky. These tawny casks are matured for a longer period of time (5.5-6 years in 100L casks) to make sure optimum integration between the cask and the spirit is achieved.

First barrelled in 2002, the single malt for this expression spent the first 20 years maturing in American Oak (ex-Bourbon casks) before being finished in a Fernando do Castilla Oloroso 40 year old sherry butt, further developing its complexity and flavour. Released at 54.2%, this single malt represents one of the oldest Australian whiskies ever released. Presented in a unique Tasmanian wood fold over box. Single Malt Scotch Whiskies

TheSpaniardbrings together two casks, from Jerez in Spain's sherry-making south, that combine to make an 8 Year Old Tasmanian Single Malt that is much more than the sum of its parts. This whisky started its life in American oak ex-bourbon casks, and then went on to spend a year in Pedro Ximenez and Oloroso casks, that have combined to make a rich, yet vibrant whisky, full of fresh and dried fruit, chocolate, coffee and a nuttiness that could only come from a sherry cask.

One of the most remarkable Australian Whiskies ever released. There are very limited quantities available of this single cask whisky. However, Hellyers Road have over 90% of all very old Australian Whisky in existence so can supply you with very significant quantities of 20+ year old Tasmanian Single Malt Whisky. Aged for 20 years in the one American oak ex-bourbon barrel, Head Distiller Fiona Coutts dubbed this whisky "The Peaches Cask" due to the nectarines and peach that leap out of a glass. Along with stone fruit, the nose has delicate florals, freshly baked baklava with orange blossom. Sweet peach and nectarine take centre stage on the palate and a slight nuttiness complements grilled caramelised pineapple. Exceptionally balanced at bottle strength, yet takes a drop or two of water wonderfully allowing buttery Anzac biscuits to come to the fore. The dance of stone fruits continues long after the last sip.

SHINOBU Japanese Single Malt Whisky KIHEI

The Coachhouse is the cask strength expression of the Old Kempton house style. To create this whisky, a small number of casks are selected that are uniquely suited to being drunk at Cask Strength - casks that when kept at high abv provide a depth, length, and complexity of flavour that can only be achieved from a good cask strength whisky. The alcohol is not overpowering and is there to provide structure to the flavour, so expect toffee, almost overcooked Anzac biscuit, and rum and raisin chocolate.

The Solera Release utilises a method common in the Spanish Sherry industry to blend spirit from different years to create a richer more complex release. The Solera system sees the partial volume of the bottom cask, or casks, released as a batch. These casks, or in our case cask, are then topped up by casks above them in the system that hold already maturing spirit. The benefit of this system is that each batch released will contain some percentage of whisky from each time the cask has been filled for the entire life of the system. The Old Kempton Solera Cask is a 500L Portuguese Port Cask that has been operating since 2018, it is rich and luxurious whisky ideal for matching with dessert of cigars.

The whisky was then moved into the most worldly of vessels: a French oak cask that started its life ageing Pinot Noir in Tasmania's south. The cask was then used to macerate Christmas fruit, giving the whisky a decadent richness. The journey did not stop there,with the cask then used to age local fortified Ruby Pinot Noir, before making its way to Hellyers Road. Old Stables is an introduction to the Old Kempton house style. It is an approachable whisky suited to all types of drinkers and matches well with food. The whisky exhibits the Old Kempton spirit style of fruity and floral flavours balanced with a rich malt and utilises all cask types to produce a well-rounded and consistent whisky from release to release.

For more than a century, the Lawrenny Homestead has been a gathering place in Tasmania’s Central Highlands. Our Homestead release pays tribute to that history with a whisky that brings people together. Matured in a trio of casks – ex-bourbon, port and sherry – Homestead is a delicate balance of American and French Oak. Layers of tropical fruit notes are lifted by oak influence, creating depth and complexity. The nose carries the freshness of rain and spring florals, leading into a structured palate where white peach, banoffee and candied ginger unfold. An approach leveraging the uniqueness of a sake brewery, based on an original Japanese design philosophy. By vatting various 3-year-aged casks (such as Bourbon, Sherry, Champagne, and Cognac), and focusing on design philosophy and multilayered composition, this challenges the notion of 'short aging'.
