The characteristic of awamori is that it contains "black koji". One of the characteristics of aspergillus niger is that it can suppress the problem of spoilage caused by miscellaneous bacteria from producing a large amount of citric acid during the process of brewing. Therefore, the ancestors of Okinawa have learned from experience that black yeast is the most suitable magic weapon for wine making under the warm and humid environment in Okinawa. In addition, awamori is unique in aroma and taste due to the fact that thai rice of the Raimi species (slender type of rice) is hard and dry and has properties that are suitable for aspergillus niger to expand mycelium (to make rice koji more effectively).
