Analysis:

Alcohol: 38% by volume.
Obs: 4.5.
Balling: 23 to 24 degrees.
Fermentation: juice fermented to base wine called rebate. Rebate is distilled once to low wine. Low wine is distilled (second distillation) where heart is kept separate.
Maturation: heart placed in French Oak barrels for 5 years. After 5 years taken from barrel and alcohol broken down to 38%.
Bottled: January 2009.

Tasting note:

The brandy is a typical Armagnac style. Dried apricots and pear flavours on the nose, sweet and soft mouth feel with almost no burning sensation on the finish. Lovely.
